This 20cm Carving knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for slicing roast meats and certain hard-skinned fruits and baked goods. Featuring a double-sided blade ensuring uniformed slices with ease. Each knife in the series has been created using high-performance VG-MAX steel at Rockwell 60-61 with a double-bevel blade angled at 16° providing excellent edge retention and cutting performance. Other knives are also available in this range.

  • Perfect for slicing roast meats and certain hard-skinned fruits & baked goods
  • VG-MAX cutting core with 34-layers (each side) with stainless Damascus cladding
  • Rockwell Hardness: 60-61: hand-sharpened Japanese double-bevel blade angle 16° on each side
  • Full tang provides strength and balance; hand wash recommended with gentle dish soap
  • D-shaped black PakkaWood handle provides strength and resists moisture exposure
  • Handcrafted in Seki, Japan
  • Limited lifetime guarantee
